My Simple Asian Curry

Stuck in lockdown meant a lot of cooking. I am so thankful for being able to this with a roof over my head, an inflow of resources and food that keep my belly full. With love and gratitude, the recipe —

Ingredients:

  • Garlic cloves (as per your taste)
  • Ginger
  • Onion
  • Salt
  • Hot chilies
  • Hoisin Sauce
  • Oyster Sauce
  • Chicken / Pork / Beef / Lamb
  • Red Chili Powder
  • Red Chili Sauce
  • Vinegar
  • Honey / Sugar / Brown Sugar
  • Cornstarch
  • Pepper

Method:

Make a thick slurry with cornstarch and water. Dip your choice of meat in it and fry in hot oil till it turns crispy. Season it well with salt and pepper.

Blitz onion, ginger, garlic, chillies vinegar and salt to make a paste. Add some oil to your pan and let it on for a minute on low heat. Add the paste and fry for three minutes. Add two spoon oyster sauce and hoisin sauce and stir for another minute on high heat. Season with salt according to your taste.

Add the fried meat to the sauce, toss it and serve with steaming rice or any bread.
